Peanut Beef (2 portions)

ooo Ingredients:

180g extra lean beef stir-fry strips
1x tbsp. peanut oil
½ x tsp. garlic flakes
1x tsp. dried ginger powder
1x tsp. white pepper (less if you don’t like heat)
½ tsp. salt (to taste)
2x medium baby marrows, grated
1x packet rice noodles (50g)
½ freshly squeezed lemon
4x tbsp. spring onion
4x tbsp. roasted/salted peanuts

Optional extra – soya sauce

Calories: 500 (per portion – excludes soya)

Method:

Heat your peanut oil in a frying pan over a medium to high temperature. Toss in your beef strips, garlic flakes, ginger, pepper and salt and stir fry for 5-10mins until the beef has browned.

Blanch your rice noodles in a bowl of boiled kettle water – plate to cover for 5mins. Drain and place the noodles in a large mixing bowl.

Add to it the beef and raw grated baby marrows. Dress with freshly squeezed lemon.

Plate and garnish with fresh spring onions and roasted peanuts.

Serve hot or cold.
