1x packet extra lean beef mince (250g)
1x tbsp. tomato puree
1x tbsp. soya sauce
1x tsp. garlic flakes
1x beaten egg
1x large tomato, diced
1x Mediterranean cucumber, diced
2x tbsp. double cream Greek yoghurt
1x tsp. tahini
Calories: 345 (per portion, includes sides)
Preheat your oven to 180°C.
Cover a baking tray with tin foil.
Mix the minced meat, tomato puree, soya sauce, garlic and beaten egg together (I use my hands). Roll the mixture into bite size balls and place onto the baking tray. Be careful not to compress the meatballs as that will affect their texture once cooked. Bake for 15min, turn, and then cook for another 15mins or until golden brown.
Plate your meatballs alongside your diced salad and side dip.
Serve hot or cold.
