1x small chicken fillet, sliced (100g)
1x tsp. sunflower oil
1x tbsp. wholegrain mustard
1x cup baby marrow, sliced (90g)
1x cup button mushrooms, sliced(60g)
1x bunch spinach noodles (1 cup cooked)
Salt and pepper to taste
Heat your oil in a frying pan, adding to it your sliced chicken fillet. Allow browning for 3-5mins then add your wholegrain mustard, mushrooms and baby marrow. Reduce heat and simmer for 10-15mins. Lastly add the cream and salt to taste.
Bring hot water to the boil and cook your spinach noodles according to packet instructions (usually 5-8mins). Remove from heat, strain, plate and finish off by topping the noodles with your mustard chicken.
