Peppered Pork Salad (2 portions)

pepper porkIngredients:

300g extra lean pork stir-fry strips
1x freshly minced garlic clove
1x tbsp. freshly minced ginger
1x tsp. fine black pepper
1x tbsp. peanut oil
1x tbsp. honey
1x crisp lettuce head, shredded (approximately 4 cups)
1x cup cucumber, slice long ways
1x green pepper, sliced long ways
2x tbsp. chopped spring onions

Dressing:
2x tbsp. peanut oil
2x tbsp. lime juice

Calories: 380 per portion (includes dressing)

Heat peanut oil in a frying pan; add to it your pork, ginger, garlic, pepper and salt to taste. Stir-fry for 3-5mins then add your honey. Reduce heat and allow simmering for 5-10mins.

Plate your salad ingredients, followed by your pork and lastly the homemade dressing.
