Tzatziki (2 side portions)

Ingredients:

1x cup double cream Greek yoghurt (approximately 200g)
1x garlic clove, freshly minced
1x tsp lemon juice or vinegar
2x Mediterranean cucumbers (mine are sliced, but dicing/grating works just as well)
Optional extra: 1x tsp fresh dill
Salt to taste

Calories: 100 per portion

Note: this is best served chilled
