Chicken and Tzatziki (2 portions)

Ingredients:
2x chicken breast fillet (approximately 125g each)
1x tbsp. sunflower oil
1x tsp. mixed dried herbs
Salt to taste

Cut your chicken breast into stir-fry strips, then heat your oil over a medium to high temperature and stir-fry for 5-10mins – until the chicken has cooked through. Salt to taste

Tazatziki:
1x cup double cream Greek yoghurt (approximately 200g)
1x garlic clove, freshly minced
1x tsp. lemon juice or vinegar
2x Mediterranean cucumbers (mine are sliced, but dicing/grating works just as well)
Optional extra: 1x tsp. fresh dill
Salt to taste

Note: tazatziki is best served chilled

Total Calories: 325 per portion (+290 calories if you add a Greek side salad)
