Pasta Primavera (1 portions)

Ingredients:

1x freshly mince garlic clove
1/3 tin chopped and peels tomatoes
125g baby spinach leaves (approximately ½ a packet)
6x pitted black olives
1x green chili (optional)
2x wheels vermicelli pasta (approximately 55g)
50g mozzarella cheese, cubed

Calories: 434 per portion (includes cheese)

Method:

Cook your pasta according to packet instructions.

Heat a sauce pan over a medium temperature. Toss in the garlic, tomatoes, spinach, chili and olives (salt to taste). Cook for approximately 5-10min, until the spinach is wilted. Throw in your cooked pasta and stir together until the pasta is well coated.

Plate, dress with mozzarella and enjoy!
