Pre-heat your oven to 180?C.
In a blender, blitz the onion, chili, tomato and garlic together until you have a smooth mixture. Dry heat a frying pan and brown your mince for about 5mins before adding your tomato mix – season to taste. Cook together for 5-10mins until the meat has absorbed the sauce – your mixture should be firm rather than sloppy.
Half your bell peppers removing the seeds, then layer your ricotta cheese, followed by the mince mixture and lastly a sprinkle of gouda cheese.
Place in the oven for 15-20mins, and then allow cooling for 5mins before serving.
