Sweet Chili Chicken Stir-Fry (1 portion)


1x chicken breast fillet (125g), sliced into strips
1x tsp. macadamia nut oil
1x garlic clove
1x tbsp. lemon black pepper spice
1x cup white button mushrooms
1x cup bean sprouts
1x small carrot, grated
1x small green pepper, sliced long ways
1x tbsp. sweet chili sauce
Salt to taste

Heat your macadamia nut oil in a frying pan over a medium heat. Add to it your sliced/diced chicken, garlic and lemon black pepper. Once browned (approximately 5mins) add your mushrooms, sprouts, carrot and green pepper and stir-fry for another 5mins before adding your sweet chili sauce.

Serve immediately.
