Quick and Easy Chicken Green Curry (4 portions)

Ingredients:

4x chicken breast fillets (500g)
2x tsp. sunflower oil
1x packet baby corn
1x packet mange tout or sugar snaps
1x cup jasmine rice, uncooked

Homemade green Thai sauce ingredients:

Blend the following ingredients together:
1x tin coconut milk, reduced fat
1x packet fresh coriander
1x tbsp. lemon juice
1x tbsp. fish sauce
3x green chilies
2x garlic clove
2x tsp. freshly minced ginger
1x tsp. salt
1x tsp. ground cumin

Calories: 461 per portion

Method:

Heat a pot over a medium to hot temperature, then add your oil and chicken and cook until brown (approximately 8mins). Add your homemade green curry sauce and heat through for 5mins before adding your corn and mange tout/sugar snaps. Place the lid on your pot and turn off your heat.

Cook your rice as per packet instructions.

Once your rice is done, plate and enjoy!
