1.5kg pork leg roast
5x cloves garlic
5x tsp. freshly minced ginger
1x tbsp. salt
1x tbsp. baking soda
Optional extra: 1x tbsp. Chinese five spice

Pre-heat your oven to 240°C.
With a knife, pierce the pork meat in random areas adding to it a garlic clove and tsp. of minced ginger (per piercing). Thereafter, take the baking soda and rub the pork crackling with it. Lastly rub the whole roast down with salt and/or the Chinese five spice.
Place your roast into the oven and cook for 20mins at 240°C, then reduce your heat to 200°C and cook for another 45mins to an hour.
