Lamb chops with Veggies (1 portion)

Ingredients:

2x lamb chops – buy the leanest looking ones (150g)
1x tbsp. fresh rosemary
1x gem squash, steamed
1x cup broccoli, steamed
Salt to taste
Optional extra: mint jelly for the lamb, and a knob of butter for the gem squash

Calories: 397 (includes 1 tsp. butter, 20g mint jelly)

Method:

Pre-heat your oven to 180°C. Cover a baking tray with tin foil and season your lamb with salt and rosemary. Bake for approximately 10-12mins per side.
