Beef Stroganoff

Ingredients: (2 portions)

2x tsp. vegetable oil
2x fresh garlic cloves, minced
200g extra lean beef stir-fry strips
250g mushrooms, sliced
1x onion, finely chopped
175g Greek yoghurt
1x tbs. lemon juice
1x tbs. paprika
1x small cup barley rice (uncooked)
Salt and pepper to taste

Calories: 428 per portion

Method:

Stroganoff: in a frying pan, heat your oil and add your onions and garlic. If your oil dries up before your onions are cooked, use water to keep moisture in. Once your onions have softened, add your beef to brown, after which you can add your mushrooms, lemon juice and paprika. Cook for approximately 5-10mins before adding your yoghurt.

Barley: in a pot, add your barley rice and 2 cups of hot water. Cook for approximately 25-35mins, until the rice has cooked through.

Plate and enjoy!
