1kg carrots (about 8 large carrots), diced/grated
1x large sweet potato, cubed
2x tomato’s, diced
1x onion, diced
1x habanero chilies (optional)
1x tsp. turmeric
¼ tsp. cinnamon powder
1x level tbsp. cumin (powder or jeera seeds)
1x bunch of coriander, freshly chopped (you can use powder as an alternative)
2l boiling water / 2x heaped table spoons of vegetable stock
Optional extra: freshly baked Italian bread to dip
In a large soup pot, bring your water and all your ingredients from vegetables to sprices to the boil. Cook for approximately 30-40 minutes. Remove from heat, and blend the soup until smooth.
Add salt and pepper to taste. If you prefer a creamier texture/taste, feel free to add a tub of fat free yoghurt.
