Grilled Gammon Steak with Asian Style Vegetables

Ingredients: (2 portions)

2x 100g gammon steaks – seasoned to taste

2x freshly minced garlic cloves
2x freshly chopped chilies
1x tsp freshly minced ginger
1x tsp Macadamia nut oil (optional)
4x grated courgettes / baby marrow
1x grated carrot, medium/large
1x small cup baby corn
1x small cup mange tout
2x tbsp. unsweetened coconut flakes
1x tsp honey
Salt to taste

Method:

Gammon: cooking time 30-40 mins

Pre-heat your oven to 200°C
Season gammon steaks – I like using dehydrated onion flakes
Place gammon steaks on a baking tray and cook until golden brown, approximately 15-20 minutes each side

Asian style veg: 10 minutes

Pre-mince and grate your various vegetables before heating the macadamia nut oil in a frying pan (coconut, olive or avocado oil are other good options). Over a medium heat, toss in the chilies, minced ginger and garlic. Add to it the grated courgettes, grated carrots, baby corn and mange tout. If you find your veg is drying out, reduce your heat or use a splash of water or fresh lemon juice to keep it moist until the vegetables release their own juices. Simmer for approximately 5 mins, after which you can add the honey and unsweetened coconut flakes. Best served immediately.
